Solvent-free Cassia CO2 Extract (Cinnamomum cassia, CAS 84961-46-6), ≥85% cinnamaldehyde, supplied wholesale by Zyntex. Natural cinnamon extract for bakery, beverages, savory flavors and fragrances. CoA and SDS with every lot.
Cassia CO2 extract is obtained from the bark of Cinnamomum cassia, also called Chinese cinnamon, by supercritical carbon dioxide extraction. It is a yellow to reddish-brown liquid with a strong, warm cinnamon odor and contains at least 85% Cinnamic Aldehyde, the main flavor compound of cinnamon.
Flavor houses use it in bakery, confectionery, chewing gum, beverages and savory products, and perfumers use it in warm, spicy compositions. Because supercritical extraction uses no organic solvents, the extract suits natural flavor declarations and clean-label products.
Cassia naturally contains Coumarin, which is limited in some foods by EU regulations, so buyers should consider coumarin content when formulating. Other spice extracts in our range include Ginger Extract, Cardamom Extract and Star Anise.
