Cinnamic Aldehyde Product Overview
Cinnamic aldehyde (C9H8O) is a pale yellow, oily liquid with the warm, sweet and spicy odor of cinnamon. Commercial material consists mainly of the trans isomer. The EU natural grade comes from cassia oil, whereas synthetic grades are also available.
In addition, flavor houses use it in cinnamon, cola and spice flavors for bakery, confectionery, chewing gum and beverages. Similarly, perfumers use it in warm, spicy notes, although it is a known skin sensitizer with usage limits under IFRA standards. Feed producers also use it in phytogenic feed additives, often together with other plant compounds.
