Anethole Product Overview
Anethole (C10H12O) is a colorless to pale yellow liquid with an intense sweet, anise and licorice odor and taste. Commercial material contains mainly trans-anethole (CAS 4180-23-8), because the cis isomer tastes less pleasant and remains limited in specifications. It solidifies at about 21°C, so it may be solid in cool storage.
In addition, flavor houses use it in licorice, anise and fennel flavors for confectionery, chewing gum and baked goods. Similarly, distillers use it in anise spirits such as ouzo, pastis and sambuca, where it gives the typical cloudy effect when mixed with water. Oral care producers also add it to toothpastes and mouthwashes. It also appears as a flavoring under FEMA number 2086.
Natural anethole comes from anise and Star Anise oil, whereas synthetic anethole offers consistent quality at bulk scale. Chemists also oxidize it to Anisaldehyde. Other aroma chemicals in our range also include Vanillin.
