Xylitol (C5H12O5) is a white crystalline powder that dissolves easily in water. It tastes about as sweet as sucrose but provides around 40% fewer calories. Because it absorbs heat as it dissolves, it gives a distinct cooling sensation in the mouth. In the EU, it carries the E number E967.
Producers mainly obtain it by hydrogenating xylose from birch wood or corn cobs. Oral bacteria cannot ferment it easily, which is why sugar-free chewing gum, mints and toothpaste use it so widely. It also replaces sugar in reduced-sugar confectionery, often combined with high-intensity sweeteners such as Sucralose or Stevia Extract.
