Azorubine Product Overview
Azorubine (C20H12N2Na2O7S2), also called carmoisine or Food Red 3, is a red to maroon powder or granulate that dissolves easily in water. It gives a bright raspberry-red shade and is stable to heat and moderately stable to light.
Food producers use it in confectionery, jellies, desserts, soft drinks, ice cream and bakery decorations. In the EU, it is approved as E122 with maximum levels, and foods containing it must carry the warning that it may have an adverse effect on activity and attention in children. It is not permitted as a food color in the United States.
